Preheat the oven to 180°C. Beat the eggs with the granulated sugar and vanilla sugar until light and fluffy. Gradually add the milk and oil and mix everything briefly.
Mix the flour with baking powder and a pinch of salt. Gradually add the dry mixture to the liquid mixture and make a smooth, slightly thicker dough.
Line a baking sheet with baking paper and spread the dough evenly. Spread the prepared fruit on the surface. Depending on its juiciness, you can lightly sprinkle it with semolina, which will absorb excess juice during baking.
Put the cake in the preheated oven and bake for approximately 30–35 minutes. After baking, let it cool and sprinkle with powdered sugar before serving.
TIPS
You can use fresh or frozen fruit. Apricots, plums, cherries, currants, strawberries or blueberries are excellent.
For very juicy fruit, it is good to use a little more semolina so that the cake does not remain too wet.
The cake is delicious while still slightly warm, but once it cools down, it slices well and its soft consistency stands out beautifully.
